U.S. ostrich farmers say theyâre finding new customers who suffer from a red meat allergy contracted from ticks. Ostrich meat has a similar taste and color to beef and is safe to eat for sufferers of the allergy called Alpha-gal syndrome.
There are only a few farms in the United States that are raising large herds of ostrich. They say theyâre getting messages daily from Alpha-gal sufferers who crave the taste of red meat.
Alpha Roost Farms owner W.D. King got into the ostrich business after he lost his job in 2022. âIâve been in poultry nutrition work most of my life in research, as a job, and then raised beef cattle here on the farm. And I kind of started joking that, ostrich, you know, Iâll start raising ostriches. Thatâs what weâll do. And opened my mouth to the wrong fella. I was talking to Brent one day; he had the same question, you know, what are you going to do? I said, ah, you know, Iâll just raise ostriches. And he said, if youâre serious, Iâm in,â says King.
The birds can stand nine feet tall (2.7 meters) and weigh more than 300 pounds (136 kilograms). Their meat is red and rich in iron, like beef.
King says his ostrich meat gets a lot of interest from people who suffer from Alpha-gal syndrome. âAlpha-gal is the main driver. That is whatâs driving the ostrich market. It does not, the ostrich meat, because itâs a bird, not a mammal, doesnât contain the Alpha-gal molecule, so you can safely eat that meat without reaction, and itâs very much like a steak.â
King says raising the birds is very different from raising chickens or cows. The males can be aggressive, so when he collects the eggs in the field, he has a special caged vehicle.
The farm has built a new barn to raise young ostriches that have hatched from eggs. It is growing its vendor list, as more Alpha-gal sufferers learn about the meatâs taste.

Viewpoint Discussion
Enjoy a discussion with your tutor.
Discussion A
The article explains that ostrich meat is safe for people with Alpha-gal syndrome because birds do not carry the allergy-causing molecule. In your opinion, how important is it for people with food allergies to find alternative choices that taste like the foods they miss? Do you think having to avoid certain foods makes eating with family and friends difficult, or is it easy to manage? Why do you say so? Discuss.
If a sudden medical condition made it impossible for you to eat your favorite dish, how would you change your eating habits? What other options would you try first to replace it? Discuss.
Discussion B
Ostrich meat has a similar taste and color to beef, making it an attractive option for red meat lovers who can no longer eat red meat. Would you agree to try a new or unusual type of food if you knew it tasted almost the same as a food you already love? Why or why not? Discuss.
Do you like to try new foods when you have the chance? Why or why not? What unusual meat choices have you tried before (ex. horse meat, bear meat)? Did you like it? Why or why not? Discuss.

ðºðž English Summary
Ostrich meat is attracting attention in the United States as an alternative to beef for people with Alpha-gal syndrome. These people are susceptible to allergic reactions when they eat red meat from mammals.
â They are easily affected by red meat because of their allergy.
Some patients may be taken aback when they learn that a tick bite can cause this condition.
â They may be very surprised to learn this.
However, the same problem is not true of ostrich meat because ostriches are birds, not mammals.
â The same problem does not apply to ostrich meat.
Ostrich farmers are up against several challenges because the birds are large and male ostriches can be aggressive.
â Farmers face several difficulties in raising them.
Still, Alpha-gal syndrome has become a major driver of demand. For people who can no longer eat beef, ostrich meat may even be a blessing in disguise because it gives them a new choice that tastes similar to steak.
â It may bring something good from a difficult situation.
There are a variety of reasons why ostrich meat may become more popular, including its beef-like taste, red color, and high iron content.
â There are many different reasons for its growing popularity.
All told, ostrich meat could become an important alternative for people with red meat allergies.
â In total / Overall, it could provide them with a useful new food choice.
